food is more fabulous with friends


This morning Hannah and I met at her house to make breakfast which turned into brunch (the best meal of the day). I just bought a bunch of asparagus through Rosewood Market that is from a farm in Batesburg and she had some bacon in her fridge, and I picked a quart of strawberries from City Roots this morning (more on that later) - a perfect set-up for breakfast.

I scrambled and seasoned 4 eggs with salt, pepper and crushed red pepper. I thinly sliced asparagus on the bias, cooked some bacon and diced it, and heated some butter in a large skillet. I poured in the egg mixture, added the asparagus and bacon, and scrambled the eggs until almost done then added a handful of mozzarella cheese.

On the side we had wheat toast and butter, fresh strawberries, coffee and water. Mmm Mmm Mmm (in the words of my Grandma). There is nothing like best friends, farm fresh foods, brunch, coffee, good conversation and encouragement in the mornings on the brink of summer.

Veggie Scramble & Hashbrowns

I laid in bed this morning for an excessive amount of time because all that I have to do today is do some studying, meet up with a friend for a birthday, and see Fantastic Mr. Fox for date night with my terrific beau. What a life. This is why I look forward to exam week every semester.

I finally made it out from under my covers and shuffled into the kitchen--no coffee! I am out! My favorite coffee I buy through EarthFare, from a roaster in Charleston, SC, Larry's (my second favorite coffee is Turtle Creek out of northeast Columbia, but I haven't yet figured out how to get it now that I don't work at a cafe that carries it) and I gave the rest to a friend for emergency exam studying and I totally forgot. What a bummer.

In light of my coffee disaster, I still had it in me to make breakfast for my roommate and me. I pulled out frozen asparagus and spinach (getting frozen spinach is the only way I can make myself eat that awful, nutrient-rich green. Raw spinach makes my stomach hurt!), some greens from Crooked Cedar Farms in Blythewood (I think it was a mixture of arugula, baby kale, mustard greens and rape), a vine tomato, cheese, and my fresh eggs from Butter Patch Jerseys (which are INCREDIBLE by the way. I only have one left.). I cooked the veggies in some butter and then threw in the beaten eggs- I had no real aspirations for an omelet but it came out like a messy frittata, so I will call it a scramble.

In a cast iron, I diced two new potatoes and threw them in with butter, salt and pepper- cooked on medium high heat for about 15 minutes and got the best hashbrowns I have ever had. Meg and I enjoyed our breakfast with apple slices.
